This is a basic soaking of beans, the quantity is small, so feel free to multiply the recipe as needed.
Recipe:
1 Cup beans, whole grains, or legumes
4 Cups filtered water
1 Tbs. whey, apple cider vinegar, or lemon juice
Instructions:
Wash well beans, put all ingredients in a glass bowl and leave 12-24 hours. You can rinse (if using apple cider vinegar, you will want to do this), then cook the beans in water double the amount of beans; bring to a boil, and skim off any foam that forms, then simmer covered for about 1- 2 hours (or until tender) depending on the bean/grain you are using. Let cool completely if you are planning on storing them.
Note:
You can store in freezer for up to 1 month in portion size mason jars or Ziploc baggies. Thaw overnight in fridge or run hot water over Ziploc bag to loose the contents free from the plastic, and then thaw in a pot with a lid over medium heat.
*Although plastic is not a good choice for storing food, in our modern, fast paced world, sometimes compromises are made and it’s better than eating canned beans any day.
