Here is a recipe for gluten free drop biscuits. They are amazing and can easily be over eaten, so watch out! I am not into promoting starchy carbohydrates, but sometimes there is a place for them, if your body can handle them. These make a great alternative to wheat biscuits. As with any “bready” food, please don’t overdo it especially if your trying to lose weight.
Ingredients:
- 1/2 C cold butter, cut in chunks
- 2 C gluten free flour mix
- 2 eggs
- 1/3 cold milk
Instructions:
- Preheat oven 400
- Grease cookie sheet or muffin tin.
- Place butter and flour in a food processor and pulse until little dough balls form, about 30 seconds.
- Then add eggs and milk.
- Keep hands or spoons greased with coconut oil when working with this dough to help prevent sticking.
- Drop dough by the spoonful onto you baking sheet.
- Baked or about 10 minutes or until turning golden brown.
